i've been checking out hawaiian music cds from the local library in preparation for a friend's luau this weekend. so of course i've been listening to them to see if they're any good, and you know what? hawaiian music with a fruit smoothie and a book is a great way to celebrate warm summer evenings! a mini-tropical vacation minus the sunburn or sand in my underwear.

yea for recipes! here's another one: poached breakfast apple

ingredients:
4 empire apples
2 quarts water
1 tablespoon lime juice
3 tablespoons plain yogurt (or soy yogurt)
1/2 teaspoon cinnamon
2 teaspoons maple syrup (optional)
1/8 teaspoon nutmeg
1/8 teaspoon allspice

instructions:
bring water and lime juice to a boil. core apples and peel top 1/3 of each apple. reduce heat and drop apples in water and limejuice. simmer, Do NOT boil, until tender (approximately 7 minutes). blend yogurt, cinnamon and maple syrup until smooth (by hand). place each apple in a desert bowl, dress with sauce, and dust with nutmeg and allspice. serve while hot.

try honey instead of maple syrup sometime. for a savory indian flair replace the spices listed above with turmeric, paprika and ginger.

from a good friend, a lovely spring/summer recipe: sun dried tomato and avacado fettuccine

1 tablespoon olive oil
1/4 cup diced sun dried tomatoes
2 tablespoons sherry wine vinegar
juice of 1 lime
1/4 cup chopped basil
1 tablespoon green onions
2 tablespoons diced green bell pepper
1 tablespoon chopped walnuts
2 tablespoons minced cilantro
1 small avacado, diced
3/4 pound fettuccine
1/2 pound bacon, cooked and crumbled

combine the olive oil, sun-dried tomatoes, vinegar, lime juice, basil, green onions, green pepper, walnuts, cilantro, and half the avacado in a large bowl. toss well. cook the fettuccine in a saucepan in boiling water for 3 minutes; drain. toss with the avacado mixture while still hot. place mixture on a serving platter. top with bacon and remaining avacado and serve. yum!
